In un-homogenized milk, the fat, which is less dense, will eventually rise to the top. In the industrial production of cream, this process is accelerated by using <a title=\"Centrifuge\" href=\"http:\/\/en.wikipedia.org\/wiki\/Centrifuge\">centrifuges<\/a> called &#8220;separators&#8221;. In many countries, cream is sold in several grades depending on the total butterfat content. Cream can be dried to a powder for shipment to distant markets.<\/p>\n<p>Cream skimmed from milk may be called &#8220;sweet cream&#8221; to distinguish it from whey cream skimmed from <a title=\"Whey\" href=\"http:\/\/en.wikipedia.org\/wiki\/Whey\">whey<\/a>, a <a title=\"By-product\" href=\"http:\/\/en.wikipedia.org\/wiki\/By-product\">by-product<\/a> of <a title=\"Cheese\" href=\"http:\/\/en.wikipedia.org\/wiki\/Cheese\">cheese<\/a>-making. Whey cream has a lower fat content and tastes more salty, tangy and &#8220;cheesy&#8221;.<sup id=\"cite_ref-1\"><a href=\"http:\/\/en.wikipedia.org\/wiki\/Cream#cite_note-1\">[1]<\/a><\/sup> They are also used in variety of food products.<\/p>\n<p>Cream produced by <a title=\"Cattle\" href=\"http:\/\/en.wikipedia.org\/wiki\/Cattle\">cattle<\/a> (particularly <a title=\"Jersey cattle\" href=\"http:\/\/en.wikipedia.org\/wiki\/Jersey_cattle\">Jersey cattle<\/a>) grazing on natural <a title=\"Pasture\" href=\"http:\/\/en.wikipedia.org\/wiki\/Pasture\">pasture<\/a> often contains some natural <a title=\"Carotenoid\" href=\"http:\/\/en.wikipedia.org\/wiki\/Carotenoid\">carotenoid<\/a> pigments derived from the <a title=\"Plant\" href=\"http:\/\/en.wikipedia.org\/wiki\/Plant\">plants<\/a> they eat; this gives the cream a slight yellow tone, hence the name of the yellowish-white color, <a title=\"Cream (color)\" href=\"http:\/\/en.wikipedia.org\/wiki\/Cream_%28color%29\">cream<\/a>.
