Butter consists of <a title=\"Butterfat\" href=\"http:\/\/en.wikipedia.org\/wiki\/Butterfat\">butterfat<\/a>, milk <a title=\"Protein\" href=\"http:\/\/en.wikipedia.org\/wiki\/Protein\">proteins<\/a> and water.<\/p>\n<p>Most frequently made from <a title=\"Cattle\" href=\"http:\/\/en.wikipedia.org\/wiki\/Cattle\">cows<\/a>&#8216; milk, butter can also be manufactured from the milk of other <a title=\"Mammal\" href=\"http:\/\/en.wikipedia.org\/wiki\/Mammal\">mammals<\/a>, including <a title=\"Sheep\" href=\"http:\/\/en.wikipedia.org\/wiki\/Sheep\">sheep<\/a>, <a title=\"Goat\" href=\"http:\/\/en.wikipedia.org\/wiki\/Goat\">goats<\/a>, <a title=\"Water buffalo\" href=\"http:\/\/en.wikipedia.org\/wiki\/Water_buffalo\">buffalo<\/a>, and <a title=\"Yak\" href=\"http:\/\/en.wikipedia.org\/wiki\/Yak\">yaks<\/a>. <a title=\"Edible salt\" href=\"http:\/\/en.wikipedia.org\/wiki\/Edible_salt\">Salt<\/a>, <a title=\"Flavoring\" href=\"http:\/\/en.wikipedia.org\/wiki\/Flavoring\">flavorings<\/a> and <a title=\"Preservative\" href=\"http:\/\/en.wikipedia.org\/wiki\/Preservative\">preservatives<\/a> are sometimes added to butter. <a title=\"Kitchen rendering\" href=\"http:\/\/en.wikipedia.org\/wiki\/Kitchen_rendering\">Rendering<\/a> butter produces <a title=\"Clarified butter\" href=\"http:\/\/en.wikipedia.org\/wiki\/Clarified_butter\">clarified butter<\/a> or <i><a title=\"Ghee\" href=\"http:\/\/en.wikipedia.org\/wiki\/Ghee\">ghee<\/a><\/i>, which is almost entirely butterfat.<\/p>\n<p>Butter is a water-in-oil <a title=\"Emulsion\" href=\"http:\/\/en.wikipedia.org\/wiki\/Emulsion\">emulsion<\/a> resulting from an inversion of the cream, an oil-in-water emulsion; the milk proteins are the emulsifiers. Butter remains a solid when <a title=\"Refrigerated\" href=\"http:\/\/en.wikipedia.org\/wiki\/Refrigerated\">refrigerated<\/a>, but softens to a spreadable consistency at <a title=\"Room temperature\" href=\"http:\/\/en.wikipedia.org\/wiki\/Room_temperature\">room temperature<\/a>, and melts to a thin liquid consistency at 32\u201335\u00a0\u00b0C (90\u201395\u00a0\u00b0F). The density of butter is 911\u00a0g\/L (56.9\u00a0lb\/ft<sup>3<\/sup>).<sup id=\"cite_ref-1\"><a href=\"http:\/\/en.wikipedia.org\/wiki\/Butter#cite_note-1\">[1]<\/a><\/sup><\/p>\n<p>It generally has a pale <a title=\"Yellow\" href=\"http:\/\/en.wikipedia.org\/wiki\/Yellow\">yellow<\/a> color, but varies from deep yellow to nearly white.
