Food to be grilled is cooked on a <a class=\"mw-redirect\" title=\"Grill (cooking)\" href=\"https:\/\/en.wikipedia.org\/wiki\/Grill_%28cooking%29\">grill<\/a> (an open wire grid such as a <a title=\"Gridiron (cooking)\" href=\"https:\/\/en.wikipedia.org\/wiki\/Gridiron_%28cooking%29\">gridiron<\/a> with a heat source above or below), a grill pan (similar to a <a title=\"Frying pan\" href=\"https:\/\/en.wikipedia.org\/wiki\/Frying_pan\">frying pan<\/a>, but with raised ridges to mimic the wires of an open grill), or <a title=\"Griddle\" href=\"https:\/\/en.wikipedia.org\/wiki\/Griddle\">griddle<\/a> (a flat plate heated from below).<sup id=\"cite_ref-answers1_1-0\" class=\"reference\"><a href=\"https:\/\/en.wikipedia.org\/wiki\/Grilling#cite_note-answers1-1\">[1]<\/a><\/sup> Heat transfer to the food when using a grill is primarily via <a title=\"Thermal radiation\" href=\"https:\/\/en.wikipedia.org\/wiki\/Thermal_radiation\">thermal radiation<\/a>. Heat transfer when using a grill pan or griddle is by direct conduction. In the United States, when the heat source for grilling comes from above, grilling is termed <b>broiling<\/b>.<sup id=\"cite_ref-2\" class=\"reference\"><a href=\"https:\/\/en.wikipedia.org\/wiki\/Grilling#cite_note-2\">[2]<\/a><\/sup> In this case, the pan that holds the food is called a broiler pan, and heat transfer is by thermal radiation.<\/p>\n<p>Direct heat grilling can expose food to temperatures often in excess of 260\u00a0<a title=\"Celsius\" href=\"https:\/\/en.wikipedia.org\/wiki\/Celsius\">\u00b0C<\/a> (500\u00a0<a title=\"Fahrenheit\" href=\"https:\/\/en.wikipedia.org\/wiki\/Fahrenheit\">\u00b0F<\/a>). Grilled meat acquires a distinctive roast aroma and flavor from a chemical process called the <a title=\"Maillard reaction\" href=\"https:\/\/en.wikipedia.org\/wiki\/Maillard_reaction\">Maillard reaction<\/a>.
